Razor Clam Fritter Cook-off 4,19,14

Ilwaco High Culinary Arts students participated in the Razor Clam Festival this weekend. Four teams developed their own, unique recipe for Razor Clam Fritters and cooked them in the giant frying pan at Veterans Memorial Park in downtown Long Beach today. Three judges from Tom Douglas’s restaurants in Seattle evaluated the fritters based upon appearance, aroma, flavor and texture. The judges were Brock Johnson of Dahlia Lounge, Dezi Bonow of Palace Kitchen and Liam Spence of Lola. Samples of the delicious fritters were passed out to those in the audience. Copies of the students’ recipes were also handed out until none were left. We are posting the recipes here so you may print them out to try these great clam fritters at home. Congratulations to all the students for their hard work and creativity. Marilyn Thomson took first prize today!
